Ingredients
2 cups all-purpose flour3/4 cup sugar2 teaspoons baking soda1-1/2 teaspoons ground cinnamon1/2 teaspoon salt3 eggs1/2 cup canola oil1/2 cup milk1-1/2 teaspoons vanilla extract2 cups chopped peeled apples2 cups grated carrots1/2 cup sweetened shredded coconut1/2 cup raisins1/2 cup sliced almonds
Preparation
In a large bowl, combine flour, sugar, baking soda, cinnamon and salt. In another bowl, beat eggs; add oil, milk and vanilla. Mix well; stir into dry ingredients just until moistened. Fold in the remaining ingredients. Fill greased or paper-lined muffin cups three-fourths full. Bake at 375° for 20-25 minutes or until muffins test done.
