Ingredients
2 tbsp. ghee or butter, melted
1/2 tsp. garlic powder
1/4 tsp. ground turmeric
1 small head of cauliflower cut into small florets
Kosher salt
Freshly ground black pepper
Preparation
Step 1In a small bowl, whisk ghee, garlic powder, and turmeric. Place cauliflower in a large bowl. Pour ghee mixture over cauliflower, tossing to coat until all florets are tinted yellow; generously season with salt and black pepper.Step 2In an air-fryer basket, arrange cauliflower in a single layer. Cook at 375º, tossing halfway through, until golden brown, 10 to 12 minutes.
Now you could sprinkle cauliflower with olive oil, salt and pepper and use your air fryer as detailed in the recipe below, but we wanted to make something a little more fun. Cauliflower, when broken up into florets, kind of already resembles popcorn, so we decided to lean into that. By adding turmeric you really get that iconic look of buttered popcorn but the real secret to getting that popcorn taste is ghee, or clarified butter. You can often find it in the grocery store but you can also learn how to make it here. Ghee, on its own, already smells like buttered popcorn, so melting it and tossing your cauliflower with it will have you wishing they sold this at the movies.
