Ingredients

6 organic free-range eggs

c. organic evaporated cane juice crystals

2 tbsp. organic evaporated cane juice crystals

1/2 tsp. organic vanilla

1/2 tsp. organic almond extract (optional)

2 c. organic almond meal

1 lb. organic strawberries

Preparation

Step 1Preheat oven to 350 degrees.Step 2Lightly grease a 10-inch springform pan and line the bottom with parchment paper.Step 3Separate the egg whites from the yolks. Place whites in a clean bowl and beat until stiff but not too dry.Step 4Gently fold in the sugar.Step 5Beat the eggs yolks until light in color, and slowly fold into the egg whites. Add vanilla and almond extract. Sprinkle the almond meal over the mixture and fold gently. Pour into the prepared pan. Bake for 30 minutes. The torte is done when a knife inserted in the center comes out clean.Step 6Remove from the oven and gently slip a knife around the edge to loosen the torte. Using a biscuit cutter, cut out rounds. Serve with a dollop of yogurt cream and strawberries.
