Ingredients
6 oz. soft, fresh goat cheese
1/4 c. lightly toasted sliced almonds
1/4 c. finely chopped dried apricot
1/4 c. finely chopped minced onion
salt
Pepper
1 1/2 tsp. sherry vinegar
1 1/2 tsp. lemon juice
1 1/2 tsp. harissa
1 1/2 tsp. honey
1 clove garlic
3 tbsp. Extra virgin olive oil
36 radishes
3 tbsp. roughly chopped cilantro leaves
Preparation
Step 1In electric mixer with paddle attachment, beat goat cheese until creamy. Add almonds, apricot, onion, salt, and pepper and blend.Step 2In a bowl, whisk together vinegar, lemon juice, harissa, honey, and garlic. Whisk in olive oil.Step 3Cut radishes into 1/2-inch dice. You should have about 2 cups.Step 4Combine radishes and cilantro. Add enough dressing to coat. Season with salt and pepper.Step 5Divide radishes among 6 salad plates and top with a dollop of goat cheese. Serve with crusty bread.
