1/3 cup sweet pickle relish1/4 cup sliced green onions1/4 cup mayonnaise2 tablespoons cider vinegar1 tablespoon sugar1/4 teaspoon salt1/8 teaspoon pepper2 cups diced peeled apples2 cups diced pickled beetsLettuce leaves, optional1 hard-boiled large egg, chopped, optional
Preparation
In a bowl, combine the first seven ingredients. Gently fold in apples and beets. If desired, serve on a lettuce-lined plate and top with chopped egg.
