Ingredients
1/2 cup all-purpose flour1/2 teaspoon baking powder1/2 teaspoon ground cinnamon1/4 teaspoon salt1/8 teaspoon baking soda1/8 teaspoon ground nutmeg1/3 cup 2% milk1 egg2 tablespoons packed brown sugar2 tablespoons canola oil1 teaspoon vanilla extract1/2 cup All-Bran2/3 cup shredded peeled tart apple1/3 cup chopped walnuts1/3 cup raisins
Preparation
In a large bowl, combine the first six ingredients. In another bowl, combine the milk, egg, brown sugar, oil and vanilla. Stir into dry ingredients just until moistened. Fold in remaining ingredients.
Fill greased or paper-lined muffin cups three-fourths full. Bake at 350° for 18-22 minutes or until a toothpick inserted in muffin comes out clean. Cool for 5 minutes before removing from pans to wire racks.
