Ingredients
1-1/2 cups all-purpose flour1/2 cup whole wheat flour1/2 cup packed brown sugar3 tablespoons toasted wheat germ2 teaspoons baking powder1 teaspoon ground cinnamon1/2 teaspoon salt1/2 teaspoon baking soda1/2 teaspoon ground nutmeg2 large eggs, lightly beaten1 large egg white1/2 cup apple cider or unsweetened apple juice1/4 cup plain yogurt1/4 cup vegetable oil1 teaspoon vanilla extract1 cup shredded peeled tart apple1/3 cup golden raisins1 teaspoon grated orange zest
Preparation
In a large bowl, combine the first nine ingredients. In a small bowl, combine the eggs, egg white, cider, yogurt, oil and vanilla. Stir into dry ingredients just until moistened. Fold in the apple, raisins and orange zest.
Transfer to a greased 9x5-in. loaf pan. Bake at 350° for 50-55 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack.
