2 packages (5 ounces each) spring mix salad greens2 large apples, coarsely chopped1 can (9-1/4 ounces) lightly salted cashews1 package (5 ounces) dried cranberries1/2 cup shredded Parmesan cheeseVINAIGRETTE:2/3 cup sugar1/2 cup canola oil1/3 cup cider vinegar1 teaspoon ground mustard1 teaspoon poppy seeds1 teaspoon salt
Preparation
In a large bowl, combine the first five ingredients. In a small bowl, whisk vinaigrette ingredients until blended. Pour over salad and toss to coat; serve immediately.
