Ingredients

3 cups diced apples1 cup julienned cooked roast beef1 cup thinly sliced celery4 green onions, thinly sliced1/4 cup minced fresh parsley1/3 cup vegetable oil2 tablespoons cider vinegar1 garlic clove, minced1/2 teaspoon salt1/4 teaspoon pepperLettuce leaves

Preparation

In a bowl, combine the first five ingredients. In a small bowl, combine oil, vinegar, garlic, salt and pepper; mix well.

Pour over apple mixture; toss to coat. Cover and refrigerate for at least 1 hour. Serve on lettuce.
