Ingredients
1 cup boiling water1/2 cup old-fashioned oats1-3/4 cups all-purpose flour1 teaspoon baking soda1 teaspoon ground cinnamon1/4 teaspoon salt3/4 cup sugar3/4 cup packed brown sugar1/3 cup unsweetened applesauce1 large egg1-1/2 teaspoons vanilla extract1 medium apple, peeled and choppedTOPPING:1/2 cup old-fashioned oats1/4 cup all-purpose flour1/4 cup packed brown sugar1 teaspoon ground cinnamon3 tablespoons cold butter
Preparation
In a bowl, combine boiling water and oats; set aside. In a large bowl, combine the flour, baking soda, cinnamon and salt. In a bowl, combine the sugars and applesauce; beat well. Add the egg, vanilla and oat mixture; mix well. Stir into dry ingredients just until combined. Fold in apple.
Pour into an 8-in. square baking dish coated with cooking spray. For the topping, combine the oats, flour, brown sugar and cinnamon. Cut in butter until mixture resembles coarse crumbs; sprinkle over batter. Bake at 350° for 40-45 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack.
