Ingredients

2 cups shredded peeled tart apples2 cups shredded peeled pears2 cups sugar1-1/4 cups canola oil1 cup raisins1 cup chopped pecans2 large eggs, lightly beaten1 teaspoon vanilla extract3 cups all-purpose flour2 teaspoons baking soda2 teaspoons ground cinnamon1/2 teaspoon ground nutmeg1/2 teaspoon saltCREAM CHEESE FROSTING:3 ounces cream cheese, softened3 cups confectioners’ sugar1/4 cup butter, softened2 tablespoons 2% milk1/2 teaspoon vanilla extract

Preparation

In a large bowl, combine the first 8 ingredients. Combine dry ingredients; stir into the fruit mixture.

Pour into a greased 13x9-in. baking pan. Bake at 325° until a toothpick inserted in the center comes out clean, about 1 hour. Cool completely on a wire rack.

For frosting, in a large bowl, beat the cream cheese, confectioners’ sugar and butter until smooth. Beat in the milk and vanilla; frost cake. Store in the refrigerator.
