1/4 cup thawed frozen apple juice concentrate2 tablespoons cider vinegar2 tablespoons canola oil2 tablespoons spicy brown mustard2 tablespoons maple syrup1/4 teaspoon salt1/8 teaspoon pepperSALAD:9 cups torn mixed salad greens2 large tart apples, chopped1 small red onion, thinly sliced1/3 cup chopped walnuts, toasted

Preparation

In a small bowl, whisk the first seven ingredients. In a large bowl, combine salad greens, apples, onion and walnuts. Drizzle with vinaigrette; toss to coat.
