Ingredients
3 cups all-purpose flour2 teaspoons baking powder2 teaspoons ground cinnamon1 teaspoon salt1/2 teaspoon baking soda1/4 teaspoon ground nutmeg1-1/2 cups 2% milk4 eggs2/3 cup packed brown sugar1/2 cup canola oil2 teaspoons vanilla extract3 cups All-Bran2 cups shredded peeled tart apples1 cup chopped walnuts1 cup raisins
Preparation
In a large bowl, combine the first six ingredients. In another bowl, combine the milk, eggs, brown sugar, oil and vanilla. Stir into dry ingredients just until moistened. Fold in remaining ingredients.
Fill greased or paper-lined muffin cups three-fourths full. Bake at 350° for 18-22 minutes or until a toothpick inserted in muffin comes out clean. Cool for 5 minutes before removing from pans to wire racks.
