Ingredients

3 large eggs, beaten2 cups sugar1/2 cup vegetable oil2 teaspoons vanilla extract2 cups all-purpose flour2 teaspoons baking soda2 teaspoons ground cinnamon1/2 teaspoon ground nutmeg1/4 teaspoon salt4 cups diced unpeeled apples1 cup coarsely chopped walnutsCREAM CHEESE FROSTING:6 ounces cream cheese, softened1/4 cup butter, softened1-1/2 cups confectioners’ sugar1/2 teaspoon vanilla extract

Preparation

In a large bowl, beat together eggs, sugar, oil and vanilla. Combine flour, baking soda, cinnamon, nutmeg and salt; mix into the batter. Fold in apples and nuts.

Spread into a 13x9-in. baking pan. Bake at 325° for 50-60 minutes or until cake tests done. Cool.

For the frosting, combine all ingredients in a small bowl. Whip until smooth and spread over cake.
