Ingredients

1-3/4 cups all-purpose flour1/2 cup sugar1 teaspoon baking powder1/4 teaspoon baking soda1/4 teaspoon salt1/2 cup finely shredded carrots1/2 cup unsweetened applesauce1/2 cup egg substitute2 tablespoons vegetable oil1/3 cup finely chopped dried apricots1/2 cup confectioners’ sugar2 teaspoons water

Preparation

In a large bowl, combine the flour, sugar, baking powder, baking soda and salt. In another bowl, combine the carrots, applesauce, egg substitute and oil; stir into dry ingredients just until blended. Stir in apricots.

Spoon into an 8x4-in. loaf pan coated with cooking spray. Bake at 350° for 45-50 minutes or until a toothpick inserted in the center comes out clean.

Cool for 10 minutes before removing from pan to a wire rack to cool completely. In a small bowl, combine confectioners’ sugar and water; drizzle over bread.
