Ingredients
1 small onion, finely chopped1 garlic clove, minced2 teaspoons vegetable oil4 large eggs1/4 cup soft bread crumbs2 tablespoons minced fresh parsley1/4 teaspoon salt1/8 teaspoon dried oregano1/8 teaspoon pepper1/8 teaspoon hot pepper sauce2 cups shredded cheddar cheese1 can (14 ounces) water-packed artichoke hearts, rinsed, drained and chopped
Preparation
In a skillet, saute onion and garlic in oil until tender; set aside. In a large bowl, whisk the eggs, bread crumbs, parsley, salt, oregano, pepper and hot pepper sauce. Stir in cheese, artichokes and onion mixture. Pour into a greased 9-in. pie plate. Bake at 350° for 22-26 minutes or until a knife inserted in the center comes out clean.
