Ingredients
1/4 cup orange marmalade1/4 cup seasoned rice vinegar2 tablespoons sesame oil4 teaspoons minced fresh gingerroot1 package (12 ounces) frozen shelled edamame1 pound fresh snow peas1 can (15 ounces) black beans, rinsed and drained1 small sweet red pepper, cut into thin strips3 green onions, chopped1 can (11 ounces) mandarin oranges, drained1/4 teaspoon salt1/4 teaspoon pepper
Preparation
In a small bowl, whisk the marmalade, vinegar, sesame oil and ginger.
Cook edamame according to package directions, adding the snow peas during the last minute of cooking. Drain and rinse in cold water. Place in a large bowl. Stir in the black beans, red pepper and green onions. Add the marmalade mixture, mandarin oranges, salt and pepper; toss to coat.
