Ingredients

3 green onions, finely chopped2 tablespoons hoisin sauce1 tablespoon minced fresh gingerroot2 garlic cloves, minced1/2 teaspoon salt1/4 teaspoon pepper1-1/4 pounds ground turkey1 tablespoon olive oilSLAW:3 tablespoons olive oil1 tablespoon cider vinegar1 teaspoon Dijon mustard1/4 teaspoon salt1/8 teaspoon pepper2 medium apples, julienned2 green onions, finely choppedASSEMBLY:4 hamburger buns, split and toasted2 tablespoons hoisin sauce

Preparation

In a large bowl, mix green onions, hoisin sauce, ginger, garlic, salt and pepper. Add turkey; mix lightly but thoroughly. Shape into four 3/4-in.-thick patties.

In a large cast-iron or other heavy skillet, heat oil over medium heat. Cook burgers until a thermometer reads 165°, 7-9 minutes on each side.

Meanwhile, for slaw, in a large bowl, whisk oil, vinegar, mustard, salt and pepper. Add apples and green onions; toss to coat.

To assemble, spread bun bottoms with hoisin sauce. Top with burgers and slaw; replace tops.
