6 cups baby kale salad blend1 cup julienned zucchini1/2 cup thinly sliced sweet onion1/2 cup fat-free plain yogurt2 tablespoons lime juice1 garlic clove, minced1/4 teaspoon salt1/8 teaspoon pepper1/2 medium ripe avocado, peeled3 green onions, chopped2 tablespoons minced fresh parsley
Preparation
In a large bowl, combine salad blend, zucchini and sweet onion. Place remaining ingredients in blender; cover and process until smooth. Divide salad mixture among 4 plates; drizzle with dressing.
