Ingredients

1 lb. Brussels sprouts, trimmed and halved

6 slices bacon, cut into pieces

3 cloves garlic, minced

Kosher salt

Freshly ground black pepper

1/4 c. extra-virgin olive oil

1/4 c. balsamic vinegar

1/4 c. honey

1 tbsp. chopped fresh rosemary

Preparation

Step 1Preheat oven to 425°. On a large baking sheet, season brussels sprouts, bacon, and garlic with salt and pepper. Drizzle with oil and toss until combined. Step 2Bake until brussels are tender and charred, 30 minutes. Step 3Meanwhile, make balsamic glaze: In a small saucepan, combine balsamic vinegar, honey, and rosemary. Simmer until reduced by half, stirring occasionally, 15 minutes (the mixture should coat the back of a spoon). Let cool.Step 4Drizzle roasted brussels sprouts with balsamic and serve.

Why balsamic glaze? Instead of roasting the sprouts with balsamic vinegar (which would make them soggy and mushy) we make a simple balsamic glaze to garnish them with. Not only does it look beautiful, but it allows the sprouts to crisp up in the oven. Simply boil down balsamic vinegar with honey and rosemary (or thyme or sage, if you prefer) until it’s thick enough to coat the back of a spoon. How do I get crispy Brussels sprouts? But one of the most important things that helps to turn these sprouts extra crispy? Leaving them alone to cook at a high heat. Cooking these Brussels sprouts at a high heat will give you that golden, crispy outside that still has a bit of a crunch. Don’t mess with them too much! Opening up the oven to move your sprouts around will cause them to take even longer to get that ideal caramelization.  How long do I need to cook them for? For us, roasting for 30 minutes led to ideal golden crispness. But, if you have slightly smaller sprouts (or depending on your oven), yours could be done even faster!
