Ingredients

2 slices bacon, cut into 1/2" pieces (optional)

2 tbsp. reserved bacon fat or extra-virgin olive oil

1 lb. green beans, trimmed and halved

10 cloves garlic, quartered

1" piece ginger, minced

1/2 tsp. crushed red pepper flakes (optional)

1/2 tsp. freshly ground black pepper 

1/2 tsp. freshly ground white pepper

1 tsp. rice wine vinegar

1 1/2 tbsp. hoisin sauce

1 tbsp. oyster sauce

2 green onions, sliced

2 tsp. toasted sesame oil

Sesame seeds, for garnish

Preparation

Step 1If using bacon: In a large skillet over medium heat, cook bacon until golden and fat is mostly rendered, 5 minutes. Transfer bacon to a bowl and reserve 2 tablespoons bacon fat in pan.Step 2If not using bacon: In a large skillet over medium heat, heat 2 tablespoons olive oil. Step 3Add in green beans, garlic, ginger, and red pepper flakes (if using) and stir frequently until beans are beginning to blister, 6 to 8 minutes. Stir in black and white pepper.Step 4Stir in vinegar, hoisin, and oyster sauce until evenly combined, then return bacon (if using) to skillet and add green onions. Cook, stirring frequently until green onions soften. Remove pan from heat and stir in sesame oil.Step 5Garnish with sesame seeds before serving.
