1 can (28 ounces) diced tomatoes, undrained1 cup chopped onion1 cup chopped celery3/4 cup chopped green pepper2/3 cup uncooked long grain rice1/3 cup vegetable oil1 bay leaf1 to 2 teaspoons salt1/4 teaspoon pepper
Preparation
In a 2-qt. baking dish, combine all ingredients. Cover and bake at 350° for 1 to 1-1/4 hours or until rice is tender, stirring occasionally. Discard bay leaf.
