2 pounds parsnips, halved and cut into 1-inch pieces2 medium onions, halved and sliced1/4 cup packed brown sugar1/4 cup olive oil1/4 cup balsamic vinegar1/2 teaspoon salt1/2 teaspoon pepper
Preparation
Preheat oven to 425°. In a large bowl, combine all ingredients. Transfer to a greased 15x10x1-in. baking pan.
Cover and bake 35 minutes. Uncover; bake 5-10 minutes or until tender.
