Ingredients
1/2 cup butter, softened1-1/2 cups sugar2 large eggs2 tablespoons 2% milk1 teaspoon vanilla or rum extract2 cups all-purpose flour1 teaspoon baking soda1/2 teaspoon salt1 cup mashed ripe bananas (2 to 3 medium)3/4 cup chopped pecans
Preparation
Preheat oven to 325°. In a large bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Add eggs, 1 at a time, beating well after each addition. Beat in milk and vanilla. In another bowl, whisk flour, baking soda and salt; add to creamed mixture alternately with bananas, beating well after each addition. Fold in pecans.
Transfer to a greased 9x5-in. loaf pan. Bake 65-75 minutes or until a toothpick inserted in center comes out clean. Cool in pan 10 minutes before removing to a wire rack to cool.
