Ingredients
1 egg1/3 cup vegetable oil3/4 cup sugar3 medium ripe bananas, mashed (about 1-1/3 cups)2 cups all-purpose flour1/2 cup old-fashioned oats3/4 teaspoon baking soda1/2 teaspoon baking powder1/2 teaspoon salt3/4 cup miniature semisweet chocolate chips
Preparation
In a large bowl, beat egg, oil and sugar until smooth. Stir in bananas. Combine the flour, oats, baking soda, baking powder and salt; stir into the banana mixture just until moistened. Stir in chocolate chips.
Fill greased muffin cups three-fourths full. Bake at 375° for 18-20 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pan to a wire rack.
