Ingredients

2 large eggs, room temperature1/2 cup 2% milk1 teaspoon canola oil1 cup all-purpose flour1 teaspoon baking powder1 teaspoon salt4 large firm bananasAdditional oil for deep-fat fryingConfectioners’ sugar, optional

Preparation

In an electric skillet or deep-fat fryer, heat oil to 375°. In a bowl, beat eggs, milk and oil. Combine flour, baking powder and salt; stir into egg mixture until smooth. Cut bananas into quarters (about 2 in. long). Dip each banana piece into batter to coat.

Fry banana pieces, 2-3 at a time, until golden brown.

Drain on paper towels. If desired, dust with confectioners’ sugar.
