Ingredients
1-3/4 cups all-purpose flour1/4 cup sugar2-1/2 teaspoons baking powder3/4 teaspoon salt1 egg1/2 cup milk1/3 cup canola oil1/2 cup mashed ripe banana1/2 cup unsweetened applesauce1 cup miniature semisweet chocolate chips
Preparation
In a large bowl, combine the flour, sugar, baking powder and salt. Combine the egg, milk, oil, banana and applesauce; stir into dry ingredients just until moistened. Fold in the chocolate chips.
Fill greased muffin cups two-thirds full. Bake at 400° for 20 minutes or until a toothpick inserted in the center comes out clean. Cool for 5 minutes before removing from pan to a wire rack.
