Ingredients

1/3 cup chopped onion2 tablespoons chopped celery1 tablespoon butter1 cup ketchup1/3 cup packed brown sugar3 tablespoons vinegar2 tablespoons water1 tablespoon Worcestershire sauce2 teaspoons prepared mustard1/2 teaspoon salt2 garlic cloves, mincedFew drops hot pepper sauce, optional1-1/2 cups uncooked long grain rice1-1/4 cups chicken broth1 broiler/fryer chicken (3-1/2 to 4 pounds), cut up

Preparation

In a saucepan, saute onion and celery in butter until tender. Add the next nine ingredients. Simmer, uncovered, for 30 minutes, stirring occasionally.

Meanwhile, combine rice and broth in a greased 13-in. x 9-in. baking dish. Top with chicken and barbecue sauce. Bake, uncovered, at 400° for 55-60 minutes or until the rice is tender and meat juices run clear.
