Ingredients
1 c. BBQ sauce
1 c. shredded rotisserie chicken
2 tbsp. finely chopped red onion
1 tbsp. finely chopped fresh basil
1 tbsp. finely chopped pickled jalapeños
All-purpose flour, for dusting
1 (11-oz.) tube store-bought pizza dough
3 c. shredded mozzarella
1 large egg, beaten to blend
Preparation
Step 1Preheat oven to 400°. In a medium bowl, toss sauce, chicken, onion, basil, and jalapeños.Step 2On a lightly floured surface, unravel dough and roll to a 15"-by-15" square. Cut crosswise and lengthwise into 3 pieces to create 9 (3") squares. Divide chicken mixture among squares. Top with cheese.Step 3Working one square at a time, lightly brush two perpendicular edges with beaten egg, then fold other two edges over to cover filling, creating a triangle; press edges to seal. If desired, pockets can be trimmed for a cleaner edge.Step 4Arrange pockets on 2 large parchment-lined rimmed baking sheets. Using a fork, crimp edges together. Lightly brush tops of pockets with beaten egg. Bake until golden brown, 18 to 20 minutes.
