Ingredients

1 pound ground beef1 medium onion, chopped2 garlic cloves, minced1 can (4 ounces) mushroom stems and pieces, drained1 teaspoon salt1 teaspoon dried oregano1/4 teaspoon pepper2 packages (10 ounces each) frozen chopped spinach, thawed and squeezed dry1 can (10-3/4 ounces) condensed cream of celery soup, undiluted1 cup sour cream2 cups shredded part-skim mozzarella cheese, divided

Preparation

In a large skillet, cook beef and onion over medium heat until the meat is no longer pink. Add garlic; cook 1 minute longer. Drain. Stir in the mushrooms, salt, oregano and pepper. Add the spinach, soup and sour cream. Stir in half of the cheese.

Transfer to a greased 2-qt. baking dish. Bake, uncovered, at 350° for 15 minutes. Sprinkle with the remaining cheese; bake 5 minutes longer or until cheese is melted.
