Ingredients

1 pound ground beef1 large onion, chopped1/2 cup salsa2 tablespoons taco seasoning1/4 teaspoon pepper1 cup shredded cheddar cheese2 large eggs1 cup 2% milk1/2 cup biscuit/baking mix

Preparation

Preheat oven to 400°. In a large skillet, cook beef and onion over medium heat until meat is no longer pink; crumble beef; drain. Stir in the salsa, taco seasoning and pepper. Transfer to a greased 9-in. pie plate; sprinkle with cheese.

In a large bowl, combine the eggs, milk and biscuit mix just until combined; pour over cheese. Bake until a knife inserted in the center comes out clean, 25-30 minutes.
