Ingredients
4 medium carrots, shredded1 medium yellow summer squash, shredded1 medium zucchini, shredded1 medium sweet red pepper, finely chopped2 medium tomatoes, seeded and chopped1 small red onion, finely chopped1/2 cup ketchup3 tablespoons minced fresh basil or 3 teaspoons dried basil3 tablespoons molasses2 tablespoons cider vinegar2 garlic cloves, minced1/2 teaspoon salt1/2 teaspoon pepper2 pounds lean ground beef (90% lean)10 whole wheat hamburger buns, split
Preparation
In a 5- or 6-qt. slow cooker, combine the first 13 ingredients. In a large skillet, cook beef over medium heat until no longer pink, 8-10 minutes; crumble meat; drain. Transfer beef to slow cooker. Stir to combine.
Cook, covered, on low 5-6 hours or until heated through and vegetables are tender. Use a slotted spoon to serve beef mixture on buns.
