Ingredients

Cooking spray

1 lb. ziti

4 tbsp. butter

2 cloves garlic, minced

4 tbsp. all-purpose flour

2 c. half-and-half

1 c. freshly grated Parmesan, divided

Freshly ground black pepper

3 c. marinara sauce

2 c. shredded mozzarella, divided

1/2 c. shredded fontina

1/2 c. freshly grated Pecorino

1/2 c. ricotta

1/2 c. panko bread crumbs

Preparation

Step 1 Preheat oven to 375° and grease a 9"-x-13" baking dish with cooking spray. Bring a large pot of water to a boil, add 2 tablespoons salt, and cook pasta until al dente according to package directions. Drain.Step 2Make Alfredo: In a large, high-sided skillet over medium heat, melt butter. Add garlic and cook until fragrant, about 1 minute. Whisk in flour and cook until mixture is bubbling and golden, 1 minute more. Slowly pour in half-and-half, whisking constantly. Bring mixture to a simmer and then stir in ½ cup Parmesan. Let simmer until sauce thickens, 2 to 3 minutes, then season with salt and pepper.Step 3Stir in marinara, 1 cup mozzarella, fontina, Pecorino, and ricotta. Add cooked pasta and toss until noodles are completely coated. Transfer pasta mixture to baking dish and top with remaining 1 cup mozzarella. Step 4In a small bowl, mix together remaining ½ cup Parmesan and panko bread crumbs. Sprinkle evenly over top of dish. Step 5Bake until golden and bubbly, about 30 minutes.
