Ingredients

1 1/2 lb. chicken tenders

Kosher salt

Freshly ground black pepper

2 1/2 c. panko bread crumbs

1 1/2 c. all-purpose flour 

2 large eggs

1/4 c. buttermilk

Olive oil cooking spray

1/3 c. mayonnaise

2 tbsp. Dijon mustard

2 tbsp. honey

1/4 tsp. hot sauce (optional)

Preparation

Step 1Season chicken on both sides with salt and black pepper. Place panko and flour in separate shallow bowls. In a third bowl, whisk eggs and buttermilk. Working one at a time, dip chicken into flour, then egg mixture, and finally into panko, pressing to adhere.Step 2Working in batches, in an air-fryer basket, arrange chicken, being careful not to overcrowd. Spray tops of chicken with cooking spray. Cook at 400° for 5 minutes. Flip chicken, spray tops with cooking spray, and continue to cook until golden brown, about 5 minutes more.Step 3In a small bowl, whisk mayonnaise, mustard, honey, and hot sauce, if using; season with salt and black pepper.Step 4Arrange chicken on a platter. Serve with honey mustard alongside.
