Ingredients

1/3 c. packed light brown sugar

1/4 c. extra-virgin olive oil 

1 tbsp. ground cinnamon

2 tsp. pure vanilla extract

1/4 tsp. kosher salt

1 1/2 c. old-fashioned rolled oats

1/2 c. raw pecans, roughly chopped

1/2 c. raw pumpkin seeds (pepitas)

1/2 c. unsweetened coconut flakes

1/4 c. raw sunflower seeds

Fresh berries and yogurt, for serving (optional)

Preparation

Step 1 In a large bowl, combine brown sugar, oil, cinnamon, vanilla, and salt. Add oats, pecans, pumpkin seeds, coconut, and sunflower seeds and toss to combine.Step 2Line an air-fryer basket with foil, coming 1" up the sides to create a foil basket. Add one-third to one-half of oat mixture (depending on size of air fryer). Cook at 350°, stirring halfway through, until golden and crispy, 6 to 9 minutes.Step 3Transfer to a large heatproof bowl and let cool. Repeat with remaining oat mixture.Step 4Serve with berries and yogurt, if desired.Step 5Make Ahead: Granola can be made 1 month ahead. Store in an airtight container at room temperature.
