Ingredients

3/4 c. oat flour

3/4 tsp. baking powder

1/4 tsp. kosher salt

1 large egg

1/2 c. whole milk

1 tbsp. butter, melted 

1 tsp. maple syrup, plus more for serving

1/2 tsp. pure vanilla extract

Olive oil cooking spray

Greek yogurt and fresh fruit, for serving

Preparation

Step 1In a medium bowl, whisk flour, baking powder, and salt. In another medium bowl, whisk egg, milk, butter, syrup, and vanilla. Fold dry ingredients into egg mixture until just combined.Step 2In another medium bowl, whisk milk, egg, butter, maple syrup, and vanilla. Fold dry ingredients into wet ingredients until just combined.Step 3Grease a 6" pie dish with cooking spray, then add one-quarter (about 1/4 cup) of batter. Place dish in an air-fryer basket. Cook at 400° until pancake is puffed and lightly golden, about 3 minutes. Repeat with remaining batter.Step 4Top pancakes with yogurt, more syrup, and sliced fruit.

Oat flour is pretty easy to find in most supermarkets, but in case you can’t find it, you can make your own from rolled oats: Place 3/4 cup old-fashioned oats in a food processor and process until the oats are finely ground, about 30 seconds. This should make about 3/4 cup oat flour. Freeze any leftovers and pop them in the toaster to reheat.
