What does okra taste like? Ask someone what okra tastes like and they might simply answer, “it tastes like okra.” That’s because this vegetable has a unique taste, which lands somewhere between grassy and nutty. It’s ideal in fried—or air-fried, as in this recipe—preparations because the richness of oil balances okra’s vegetal notes. Look for okra at your farmers’ market from summer and into fall.  What is Cajun seasoning? Cajun seasoning (sometimes called Cajun spice mix) is a combination of spices that are common to Louisiana cuisine, like paprika, cayenne, and garlic powder. Many store-bought ones are packed with salt, so either choose one that’s salt-free or make your own Cajun seasoning and leave out the salt. This allows you to control the sodium in the recipe.
