Ingredients
1 lb. baby potatoes, halved
1 tbsp. extra-virgin olive oil
1 tsp. garlic powder
1 tsp. Italian seasoning
1 tsp. Cajun seasoning (optional)
Kosher salt
Freshly ground black pepper
Lemon wedge, for serving
Freshly chopped parsley, for garnish
Preparation
Step 1In a large bowl, toss potatoes with oil, garlic powder, Italian seasoning, and Cajun seasoning, if using. Season with salt and pepper. Step 2Place potatoes in basket of air fryer and cook at 400° for 10 minutes. Shake basket and stir potatoes and cook until potatoes are golden and tender, 8 to 10 minutes more. Step 3Squeeze lemon juice over cooked potatoes and garnish with parsley before serving.
We love using the air fryer for super crispy potatoes in half the time — no waiting for the oven to preheat, and cooked through in around 10 minutes! Plus, the air fryer requires less oil than typical roasting while still giving an ultra-crispy, golden outside. Tip: No need to boil your potatoes before frying! The air fryer will do all the work to these tiny taters, keeping them soft and cooked-through on the inside. If you’re doubling the recipe, make sure to cook in batches! You want your potatoes to be in a single layer when cooking for maximum crispiness (trust us — it’s worth it). We coated these babies in a mix of savory seasonings before topping them with fresh herbs, but this easy side is endlessly customizable. Keep it simple with garlic powder, salt and pepper, or switch it up by adding your favorite seasonings — cajun, herbs de Provence, even Parmesan — to make them completely your own. These crispy bites are so easy, they come in handy for almost any meal, anytime of the day! Serve them up in your breakfast taco, as a hearty side to your weeknight chicken dinner, or whip them up with some ketchup or ranch for a dippable, savory snack. Still hungry for potatoes?
