Ingredients

Olive oil cooking spray

3 large eggs

2 tbsp. whole milk

Kosher salt

Freshly ground black pepper

3 tbsp. thawed and well-squeezed chopped frozen spinach

3 tbsp. finely chopped roasted red peppers

1 tbsp. crumbled goat cheese 

Preparation

Step 1Grease a 7" nonstick round cake pan with cooking spray. In a medium bowl, whisk eggs, milk, a large pinch of salt, and a few grinds of black pepper until well combined.Step 2Pour egg mixture into prepared pan. Top half of egg mixture with spinach and red peppers. Carefully transfer pan to an air-fryer basket. Cook at 350° until eggs are just set, 6 to 8 minutes.Step 3Remove pan from air fryer. Top vegetables with goat cheese. Using a spatula, fold egg over filling. Slide omelet out of pan onto a plate.

Hot tip: This omelet will look set on top before it’s fully cooked. If you take it out to fold it and there’s still some runny egg on the bottom, just pop it back in the air fryer for another minute.
