Ingredients

1 lb. ground turkey (light or dark meat)

1 tbsp. light brown sugar

2 tsp. finely chopped fresh sage leaves

3/4 tsp. kosher salt

3/4 tsp. smoked paprika

1/2 tsp. crushed red pepper flakes 

1/2 tsp. fennel seeds, crushed

1/2 tsp. garlic powder

Olive oil cooking spray

Preparation

Step 1 In a medium bowl, combine turkey, brown sugar, sage, salt, paprika, red pepper flakes, fennel seeds, and garlic powder with a fork or your hands until evenly combined. Using damp hands, form turkey mixture into 8 thin patties about 3" in diameter and 1/4" thick (the meat will puff up in the air fryer).Step 2Grease an air-fryer basket with cooking spray. Working in batches, arrange patties in basket, spacing about 1/4" apart (do not overcrowd). Cook at 400°, flipping patties halfway through, until golden and crisp, 5 to 8 minutes.

Would you rather pork than turkey? No problem, just substitute the meat in equal amounts. For a spicier version, up the crushed red pepper flakes, or add in a bit of cayenne pepper.
