Ingredients
Cooking spray, for pan
1 c. all-purpose flour, sifted
1/4 c. cornstarch
1/2 tsp. kosher salt
12 egg whites, at room temperature
1 tsp. cream of tartar
1 1/2 c. granulated sugar
1 tsp. pure vanilla extract
1/2 tsp. almond extract
Whipped cream, for serving
Sliced strawberries, for serving
Preparation
Step 1Preheat oven to 350° and grease a tube pan with cooking spray. In a large bowl, sift together flour, cornstarch, and salt. Step 2In another large bowl beat egg whites and cream of tartar until soft peaks form, then gradually add sugar until stiff peaks form. Beat in extracts. Step 3 Gently fold in half the dry mixture until fully combined, then fold in remaining dry mixture until just combined. Be careful not to deflate egg whites! Step 4 Pour batter into prepared pan and bake until a toothpick inserted into the middle comes out clean, 35 to 40 minutes. Let cool 15 minutes then remove from pan and let cool completely. Serve with whipped cream and strawberries.
