Ingredients

12 c. apples, peeled, cored, and thinly sliced

1 c. granulated sugar

1/3 c. packed brown sugar

1/4 c. lemon juice

1 tsp. kosher salt 

2 tsp. ground cinnamon

1/4 tsp. ground nutmeg

1/4 c. cornstarch

1/4 c. water

Preparation

Step 1In a large pot over medium heat, add apples, sugars, lemon juice, salt, cinnamon, and nutmeg. Let simmer for 8 minutes. Step 2In a small bowl, whisk together cornstarch and water, then pour over apples. Continue simmering until thickened, 2 minutes more. Remove from heat and let cool completely. Step 3If not using right away, place filling into freezer-safe containers and freeze until ready to use.

To make an apple pie with a crumb topping (like a Dutch Apple Pie), pre-bake your homemade pie dough until golden. (Don’t forget to prick it with a fork and use pie weights in the beginning!) Once you fill the crust with the filling, it should only need 20 or 30 minutes in the oven.  To make a double crust pie, your pie will take about 50 minutes to get nice and golden and crispy. But remember, you’ve already saved yourself from the hassel of washing and cutting a ton of apples!
