Ingredients
1 lb. sourdough, cut or torn into 1" pieces
4 tbsp. butter, melted
1/2 tsp. kosher salt
Freshly ground black pepper
2 tbsp. extra-virgin olive oil
1 medium yellow onion, chopped
2 stalks celery, chopped
1 tsp. freshly chopped rosemary
2 Granny Smith apples, peeled, cored, and chopped
1/2 c. dried cranberries
1/2 c. sliced almonds
1 1/2 c. low-sodium chicken broth
Preparation
Step 1Preheat oven to 350°. Place bread in a large bowl and toss with melted butter, salt, and a few cranks of black pepper. Spread onto a large baking sheet and bake until bread is toasted, about 15 to 20 minutes. Step 2In a medium skillet over medium heat, heat oil. Add onion, celery, and rosemary and cook until vegetables are soft, 5 minutes. Season with salt and pepper. Step 3In a large bowl combine toasted bread, vegetables, apples, cranberries, and almonds. Add broth and toss to coat bread. Transfer mixture to a 9”-x-13” baking pan and cover with foil. Step 4Bake for 30 minutes, then remove foil and bake until top is golden, 30 minutes more.
What are the best apples to use for stuffing? We used Granny Smith apples for their tangy, tart flavor and crispness. If you’d prefer more pops of red in your stuffing, you could also use Pink Lady apples, Cortlands or Braeburn. The key is to bake with apples that have a lot of acidity, and will hold up well in the oven—no mushiness allowed here. What bread should I use? We recommend using a quality loaf of bread like sourdough for this recipe. Make sure to let it get nice and toasty before adding all of the liquid to it—it will make all the difference! Cube it the night before and let it dry out even. Fresh bread just can’t soak up liquid the way stale bread can. Is this vegetarian? We used chicken broth in this recipe, but if you’re looking for a vegetarian Thanksgiving side, you can swap it out for vegetable broth instead! Need it to be vegan?
