Ingredients
1 wide loaf of bread
8 oz. cream cheese, softened
1/3 c. sour cream
1/3 c. mayonnaise
1 can artichoke hearts, drained and chopped
1 10-oz. package frozen spinach, thawed and chopped
2 cloves garlic, minced
1 c. shredded mozzarella, divided
1/2 c. freshly grated Parmesan
pinch of crushed red pepper flakes
kosher salt
Freshly ground black pepper
Preparation
Step 1Preheat oven to 350°.Step 2Slice off the top 1/2" of the bread and hollow out the inside of the bread to create a bowl. (Save insides and top slice for snacking.)Step 3In a large bowl, combine cream cheese, sour cream, mayonnaise, artichokes, spinach, garlic, 3/4 cup mozzarella, and Parmesan. Add red pepper flakes and season with salt and pepper.Step 4Spoon the mixture into the bread bowl until filled to brim, then sprinkle with remaining mozzarella. Place on baking sheets and bake until dip is warm and bubbly, 28 to 30 minutes. Step 5Dip bread scraps in any leftover spinach-artichoke dip while the stuffed bread bakes. Slice stuffed loaf and serve.
