Ingredients
8 strips bacon, cut into 1/4" pieces
2 tbsp. butter
2 French baguettes, cut into 6" pieces, sliced lengthwise
2 c. ricotta
2 c. arugula, washed and dried
honey
Flaky sea salt (such as Maldon)
Freshly ground black pepper
1 lemon, cut into wedges
Preparation
Step 1In a large skillet over medium-high heat, cook bacon until browned and crisp, then transfer to a paper towel-lined plate. Step 2Transfer all but 1 tablespoon bacon fat into a small cup and reserve. Melt 1 tablespoon butter in skillet and toast baguettes, cut side down, until golden brown. Add additional butter as needed.Step 3Remove toast from skillet and spread each piece with ricotta. Top with a small handful of arugula and pieces of bacon. Drizzle with honey, then sprinkle with sea salt and pepper. Serve with lemon wedges.
