Ingredients

1/4 c. freshly grated Parmesan

1/4 c. panko bread crumbs

1/4 c. chopped fresh parsley, plus more for garnish

2 cloves garlic, grated

1 tbsp. plus 1 tsp. extra-virgin olive oil, divided

2 lb. piece of salmon

kosher salt

Freshly ground black pepper

1 lemon

Preparation

Step 1Preheat oven to 450°. Line half sheet pan with parchment paper.Step 2In a small bowl combine Parmesan, panko, parsley, garlic and 1 tablespoon oil. Step 3Place salmon on parchment paper and drizzle with 1/2 teaspoon oil. Spread oil evenly all over using a spoon and season with salt and pepper. Sprinkle Parmesan mixture all over salmon and pat down to crust the entire surface. Bake until golden brown, for about 10 minutes.Step 4Garnish with parsley and thick lemon slices. Squeeze a bit of lemon on salmon and serve immediately.
