Ingredients

1 lb. ground turkey

1 large egg, beaten

1 tbsp. low-sodium soy sauce

1/2 small shallot, minced

2 green onions, thinly sliced

2 cloves garlic, minced

1 tsp. ground mustard

Kosher salt

Freshly ground black pepper

Pinch crushed red pepper flakes

Hamburger buns

Spicy mayonnaise

Butterhead lettuce

Red onion, thinly sliced

Avocado, sliced

Preparation

Step 1Preheat oven to 350° and line a baking sheet with parchment paper. In a large bowl, combine ground turkey and remaining ingredients. Season with salt, pepper, and pinch of red pepper flakes and mix until just combined. Form into 4 patties about 3” wide and place on prepared baking sheet. Mixture may be wet and it’s helpful to wet your hands to form into a patty. Once on the baking sheet, you can flatten the patty more. Step 2Bake for 15 minutes until cooked through and internal temperature reaches 165°. Step 3Serve on buns with desired toppings.

 We skip the bread crumbs (which can lead to dryness!), so it’s helpful to wet your hands to form the patties. Once they’re on the sheet tray, you can continue to shape into a more perfect patty if you want. The thickness of your patties will determine how quickly they cook, so if you go wider than a 3" patty keep an eye on them to make sure they don’t overcook! You can top these however you like, but we love adding some richness to the lean turkey burger with a bit of avocado as well as a bit of bite from fresh red onion.
