4 zucchini, quartered lengthwise
1 tbsp. extra-virgin olive oil
2 cloves garlic, thinly sliced
2 tsp. fresh thyme, chopped
Pinch red pepper flakes

Preparation
Step 1Preheat the oven to 375°. Combine zucchini, oil, garlic, thyme, and red pepper flakes on a large sheet tray. Season with salt and pepper and use your hands to toss zucchini until they are coated in oil and spices.Step 2Roast until zucchini is tender and slightly golden, 13-15 minutes. Step 3When zucchini is tender, toss with lemon zest and serve with lemon wedges on the side.
