Ingredients

2 small heads cauliflower, cut into florets

1/4 c. sweet chili sauce

3 tbsp. extra-virgin olive oil

1 tbsp. Sriracha

1/2 tsp. chili flakes

3 cloves garlic, minced

Juice of 1 lime

Kosher salt

1 green onion, thinly sliced

1 tsp. toasted sesame seeds

Preparation

Step 1In a large pot of boiling water, blanch cauliflower, 4-6 minutes until fork tender. Drain into colander and rinse with cold water to halt cooking.Step 2In a large bowl, whisk together sweet chili sauce, oil, Sriracha, chili flakes, garlic, and lime juice. Add cauliflower to bowl and toss to coat. Season with salt. Step 3Heat grill or grill pan to medium high heat. Thread cauliflower onto skewers and grill, turning frequently, until cauliflower is charred and tender, about 10 minutes. Garnish with scallions and sesame seeds and serve.
