Ingredients
1 onion, roughly chopped
2 celery stalks, roughly chopped
1 carrot, roughly chopped
2 cloves garlic, halved
1 tsp. Italian seasoning
kosher salt
Freshly ground black pepper
2 tbsp. ketchup
1 large egg
1/2 c. panko bread crumbs
1 lb. ground beef
1/2 lb. ground pork
1/4 c. bbq sauce
Preparation
Step 1Preheat oven to 400° and line a rimmed sheet pan with parchment paper.Step 2In the bowl of a food processor add onion, celery, carrot, and garlic; pulse 3 to 4 times until finely chopped. Scrape side of bowl if needed. Transfer to a large mixing bowl; combine with Italian seasoning, salt, pepper, ketchup, egg, and bread crumbs. Once well mixed, add ground beef and ground pork. Mix by hand just until incorporated.Step 3Divide mixture into 4 large ovenproof ramekins placed on a sheet pan. Brush meatloaf with BBQ sauce and bake for 20 minutes.Step 4Change oven to broiler setting and cook until BBQ sauce glaze is slightly caramelized, 3 to 5 minutes. Serve immediately.
